This is stylish, casual modern Nordic food from a trio of Atelier September restaurants, located in and around Copenhagen, Denmark.
Chef Frederik Brahe wanted “a daytime spot in that magical territory between eating in and eating out, where everyone belonged… creating healthy and delicious everyday cooking and drawing inspiration from hippie cuisine (if there is such a thing). Our personal touch was to execute our recipes with the knowledge fine dining and the contemporary food world.”
That impulse manifest itself in food such as:
Asparagus crudite salad with egg and rye bread
Eggplant with mint and chilies
Radicchio with brown butter vinaigrette, plums, and grapes
Sourdough pancakes with cheese and sage
Burrata with zucchini
Chocolate miso cake with rye flour
Other than the use of anchovies in a few dishes, the recipes are vegetarian.
